A classy and elegant dessert served in the luxurious Domaine de l’Hospitalet, the pears in this recipe are poached in a 1995 Chateau Des Hospitaliers red wine, produced in the vineyard located in the same property. You can also use your preferred French red wine to make this recipe. Other excellent reds that go well with pears include Pinot Noir or Merlot for a low intensity wine flavor that will emphasize the flavor of the pears. If you want a more intense wine flavor, go for a full-bodied and rich red wine like Zinfandel or Shiraz. Cabernet is also terrific of you want a good balance of pear and wine flavor.
Once peeled, pears discolor quite easily so make sure that you have your red sauce ready before you peel them. Keep the stems on for a lovely presentation. Use large sweet pears and peel them according to their shape. They will absorb all the juices of the red wine and become tender and unbelievably divine especially when eaten with the ice cream with black pepper.
- 4 pears
- 1 1/3 cups sugar
- 2 cinnamon sticks
- 2 cloves
- 2 cups white wine
- 2 cups water
Prepare a syrup with equal amounts of water and white wine, as well as sugar (in a relation of 30% of the liquid), cinnamon sticks, and cloves. Simmer.
Peel the pears. Poach them when the syrup starts to boil. Let them completely cool in the syrup. This takes about 12 minutes.
Place a scoop of vanilla ice cream on a dish. Cut the pears and place on top of the ice cream. Decorate with cinnamon stick and pour syrup. Sprinkle with freshly ground black pepper.
